The Homestead Recipe Book: Lemonade Scones

Cream Tea on the Homestead Verandah

Lemonade & Cream Scones

2 cups self raising flour

1/4 cup caster sugar

1/2 tspn salt

1/2 cup thickened cream

1/2 cup lemonade

2 tbspns milk

Preheat oven to 220′. Lightly grease baking tray.

In a lovely big bowl combine flour, sugar & salt, then add cream & milk to form soft dough.

Turn onto a lightly floured surface and knead gently until combined.

Press dough out until about 2cm high then use a 6cm scone cutter to make rounds.

Place on tray fairly close together (the scones rise better when they can lean on each other!) and brush the tops with milk.

Bake for 10/15 minutes until a light golden brown.

Serve warm with double or clotted cream & homemade preserves,

a pot of loose leaf tea and some congenial company.

Wedding venue shopping? 5 things to consider first

You’re betrothed! Congratulations! Yet it seems that no sooner is the sparkler on your finger than the questions begin: “Have you set a date?” “Can I be your bridesmaid?” “Where is the wedding?” It’s easy to feel completely overwhelmed!

But a stressed bride is a bridezilla bride! Keep calm and carry on – remind yourself frequently that the day is about you and your husband to be. The day should reflect you as a couple and also as individuals: what is important to you both?

Take some quiet time out (with a glass of champers!) and browse wedding magazines for inspiration, check out wedding websites such as www.easyweddings.com.au and have a brainstorming session with your mum and girlfriends.

If you have workshopped the following 5 points first, it will make your search to shortlist (and ultimately choose) a wedding venue much easier:

1. The Big Day: Do you want to get married on or near your anniversary? Are you keen for a Spring garden wedding or a snuggly Winter wedding? Are you open to a Friday or Sunday? Have a rough idea of the timeline – what time will the ceremony be, etc

2. “I Do!”: Would you like the ceremony and reception to be held at the same venue? This is becoming a popular option as it reduces travel for the guests and allows more mingle time (while you slip away for some photos)

3. The More the Merrier: How many guests? Most venues have minimum and maximum numbers, so very intimate (less than 30) or extravaganzas (over 200) need to check those important details before falling in love with a venue! The size can also determine the format. Do you want a pretty afternoon garden party with high teas? A sophisticated cocktail party with canapes and drinks all night? A fancy formal 3 course dinner? A relaxed buffet?

4. The Budget!: Sites such as Easy Weddings have great tools like budget planners to help you plan a realistic and achievable wedding. How much can you save and can both sets of parents help out? It’s worth every cent to have the day of your dreams, but be careful to find balance – be thrifty in some areas so you can splurge in others!

5. Theming: Have you always had a vision of your wedding day? Do you already have a theme/colour scheme in mind and you will stick to it come what may? Or will you find a venue you both love and then theme around what is already there? If you want a ‘New York/black and white/city chic’ theme you probably wouldn’t look at beach front venues, and if you are both into ‘eclectic and unusual’ then large hotel function rooms wouldn’t suit.

So, do your homework now and save lots of time later! You won’t end up with a confusing pile of wedding packages to sort through, and you won’t need to drag the groom around dozens of wedding venues (he can spend that time ~~playing golf~~ composing his wedding speech).

1. The poddy calves Mr Darcy and Horatio Hornblower turn a fetching shade of dark grey. It’s very cute to see them venturing cautiously out of their little stable – ”Darcy is there still wetness coming from the sky?” “Yes Horatio but damp hay is delicious, do try some!”

2. A waterfall cascades down the rockery wall outside the office window, creating a free water feature

3. The light is beautiful for photography

4. Our boots make a satisfyingly squelchy sound when we walk across the sodden grass

5. The sound. Time for a nap

What we learned at Blog School

Firstly, sitting in the back row to be closer to the freshly baked hazelnut & chocolate cookies is a priority.

Secondly, use WordPress. (Thank goodness or we would have to redo all our hours of hard work on some other site!)

Last but not least: Share your passion! This sounds great to us, because we are passionate about so many things – weddings, wine, romance, pampering, great coffee, animals, fresh flowers, beautiful food, gardening, writing, chocolate, swimming, our families, french champers, crafty things, vintage shopping…. it will be a rare day that we find nothing to blog about.
